"Deep" bounce wedges have a very wide sole that is positioned right behind the clubface's leading edge. As you open up the clubface, the leading edge rises off the ground. Open up this clubface on a tight lie and you increase your chances of hitting the middle of the golf ball. There's just too much "bounce" for a tight lie, but this club would work much better on a fluffy lie.
Medium Bounce Wedges

"Medium" bounce wedges have less "bounce" on the sole of the club. As you open up the clubface, the leading edge still rises off the ground but not as much as a "deep" bounce wedge does.

"Shallow" bounce wedges have almost zero degrees of "bounce" on the sole of the club. As you open the face of the club up, the leading edge stays very low to the ground. On tight lies, you can get the leading edge under the ball much easier with a "shallow bounce" wedge.
